American Oak Second Fill Single Cask TD0372 was distilled in September of 2012 and decanted in January of 2024, maturing at 11 years old in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 47.4% ABV, this cask yielded just 210 bottles.

TASTING NOTES

Nose

Toffee apple BLAST. A very round and full nosefeel. Cashews, plum blossom, and lavender on the breeze. Rye bread, blackberry jam, candied cherries and subtle white pepper. Ginger syrup and a delicate briney note. Light, sweet and fabulously layered.

Palate

Seriously slippery. Very well developed full mouthfeel and body. Marzipan, marshmallow, nougat. Almonds, honeycomb and milk chocolate. Pineapple chunks, glace ginger and a bright citrus glow of lemon marmalade, mandarin and yuzu.

Finish

A stunning transition from palate to finish: A psychedelic vision of level-10 nectarines, tropical fruits and muscatels. Baklava with an extra dose of orange blossom water, and
lemon marmalade again. After the light waves and laser beams of fruit subside, a calm finish of herbal honey and Pastis emerges.
