Our American Oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.
Sullivan Cove's American Oak ex-Bourbon single casks are some of their most awarded and esteemed expressions. Aged in 200L American Oak ex-Bourbon casks, this oak varietal beautifully enhances SC's distinctive and fruity spirit. Starting with a robust malt base, it unfolds layers of vanilla, caramel, coconut, fruit, and delicate hints of white floral and herbal notes. As single cask bottlings, every batch presents distinct nuances, reflecting the character of each barrel.
Notable awards include World Whisky Masters 2018 - Master; World Whisky Awards 2015 - Best Australian Single Malt 13 to 20 Years.; Australian Distilled Spirits Awards 2019 - Gold Medal.

TASTING NOTES
NOSE
Malt, Vanilla, White Flowers
Vanilla and Calvados notes. Candied apples/ pears and new leather.
PALATE
Silky and waxy, with a full body. Marie biscuits, balsa wood, and a wonderfully deep roasted nut base.
Strawberries, dried mango and beeswax float through the mid-palate and hold the brighter and deeper notes together well.
A hint of bergamot.
FINISH
Honey, Anzac biscuits mingle with the deep nutty note from the palate which carries through, deepening into Nutella with chestnuts. Maple syrup. Paradise Punch juice.
A delicate Rooibos tea, fennel seeds and a hint of eucalyptus. Bean sprouts.
