16 Year Old American Oak Second-Fill Single Cask TD0066 was filled in December of 2005 and decanted in August of 2022, for a maturation of 16 years and 7 months. After such a long maturation, this 300L American oak second-fill cask yielded only 452 bottles at 47.4% ABV.

TASTING NOTES

Nose

Straight up barley sugars, lemon drops and raw oak rise from the glass. Banana bread and bran meet kiwi fruit, a grassy edge, Anzac and arrowroot biscuits in the mid-section, as 
rhubarb and green melon rest below.

The sweet American oak character acts as an agent for the Sullivans Cove bright fruit character to emerge, wrapping it up and presenting it subtly, with such integration that the lines between are almost undetectable.

Palate

Moving gently and softly to the palate, the texture is incredible. Oak is at the forefront, supple yet firm, followed by a lemon and orange citrus tang.

The oak is gentle and swelling – everywhere all at once! Sweet mandarin, pencil shavings, stewed fruits and wafer sticks. A big malt character and peaches come out with air, banana chips and cumin.

Finish

Without interruption the soft and sweet side of the oak guides us to the finish. This tastes OLD. Puff pastry, coconut milk and vanilla. An almost medicinal numbing note becomes clove. There is liquorice, and dehydrated and salted mango pieces – ah, Sullivans Cove 
spirit, there you are again. Crepe paper and peaches and cream (once again, this tastes 
OLD!) see the whisky out with a medium-long finish.
